Packer Cut Brisket
In the USA the whole brisket is known as a “packer cut”, because it is bought whole in a vacuum pack. If you think that the whole brisket may be too big for you, then you can select one of the smaller cuts from the point end or the flat end.
If using a whole brisket or the point end, you will want to separate the point from the flat before slicing as the grain runs in different directions. This can be easily done by looking for the layer of fat that runs between the point and the flat.
